THE BEST IN THE WEST LONGHORN LEAN MEATLOAF

Recipe by Velna Jackson, Stonewall Valley Ranch, Fredericksburg, Texas

Ingredients

3 lbs. ground Longhorn lean beef

1/2 c. chopped celery

1/2 c. chopped green onions or Texas sweet onions

8-12 soda crackers, crushed & crumbled

2 eggs, beaten

1-¼ c. milk

2 T. Worcestershire sauce

1 T. soy sauce

2 tsp. salt

1 tsp. pepper

Directions

Mix the above in a large bowl. Form meatloaf in a glass baking dish. Top meatloaf with catsup and sliced green peppers. Meatloaf may also be topped with 2 or 3 slices of bacon. Bake at 325 degrees for 1-½ hours. Juice may be poured off before serving. Serve with garlic mashed potatoes and lots of catsup on the side. All-ln-One Meatloaf Veggie Dinner: In the glass baking dish, surround meatloaf potato wedges and carrots that are salted to taste. Cover with foil and bake. Serve with lots of catsup on the side. Serves 4 to 8.
