HAMBURGER SOUP
Recipe by Carol Holmes, Redwig Registered Texas Longhorns
Ingredients
1 lb. ground beef
2 med, onions, diced
1 c. chopped carrots
1 c. chopped celery
2 cans beef broth
1 can stewed tomatoes, not drained and chopped
½ tsp. Basil
½ c. uncooked barley
3 c. water
½ c. ketchup
1 bay leaf
1 tsp. Salt
Directions
Brown beef and drain off fat. Add all other ingredients and simmer for about 1-½ hours. Freezes well. Wonderful on a cold evening.
